At Ermitage du Pic Saint Loup, the wines are made to tell a story – that of soils which have nourished the vines. Constantly experimenting, the three brothers work to create blends that will best express and marry the specific characteristics and the differences found in each plot of vines. Their low yield, focusing on the terroir effect, adds to the fabric of the wines, of which only the most successful are bottled.
Some of these benefit from the fresh, pleasant aspect of the red fruit. For example, the Ermitage Classique, very slightly spicy, offers up notes of red fruit in brandy and liquorice, better for drinking when young. Other wines are more complex, spicier, more tannic and deserve longer aging.
